Baked and broiled crab cakes


I'm such a sucker for a good crab cake. I had never really tried to make them myself, but my mother in law bought us some jumbo lump crab meat so I decided to put it to good use. BryGuy and I prefer a crab cake with not much filler (breadcrumbs) and a nice crispy outside and a nice soft and flavorful inside. However, I was trying to be a little bit healthier with this recipe so I decided to bake the crab cakes and then crank up the broiler for a few minutes at the end to really get the outside nice and golden. They were so delicious and I served them with a horseradish remoulade and a lemon wedge.  

Baked Crab Cakes
Prep time: 15 minutes
Cook time: 35 minutes
Makes approximately 12 crab cakes

1 1/2 pounds of jumbo lump crab meat
2 eggs beaten
1 tablespoon mayonnaise
1 tablespoon dijon mustard
1 tablespoon worchestershire sauce
1 tablespoon Old Bay seasoning
1/4 cup of red and orange pepper finely diced
1/4 cup of red onion finely diced
1/2 cup of panko style breadcrumbs
2 tablespoons butter melted
2 tablespoons olive oil

Preheat oven to 375 degrees. Grease baking sheet with melted butter and olive oil mixture.  

Drain the crab meat and pick through it for shells. Put the crab in a medium mixing bowl and set aside.

In a small bowl, whisk the egg, mayonnaise, mustard, Old Bay seasoning, lemon juice, and Worcestershire sauce. Scrape the mixture over the crab and mix gently until well combined. Gently break up the lumps with your fingers but do not overmix. Gently fold in breadcrumbs, peppers, and onions. 

Shape the crab mixture into cakes about 1 inch thick. Do not overwork the cakes with your hands, gently press together until shape holds and put on the greased baking sheet. 

Cover cakes with plastic wrap and refrigerate for 10 minutes. 

Take crab cakes out of the refrigerator and remove plastic wrap. Use a brush to apply the remaining butter and olive oil mixture to the top of the crab cakes. Place the baking sheet in the preheated oven and bake for 15 minutes. Gently flip crab cakes and bake for an additional 10 - 15 minutes. 

Adjust oven rack to be 8-10 inches from the broiler. Turn the broiler on high. Cook crab cakes under the broiler for 3-5 minutes on each side until golden brown and crispy.
