Stretching Thai takeout for another dinner


There is a wonderful Thai restaurant in our neighborhood, Chabaa Thai Bistro. It's a little bit pricey, but so delicious that I think it's worth it. We decided to order up some panang curry with chicken and crazy noodles for takeout after a busy day. Their takeout portions are okay, I always think you get more food if you actually eat in the restaurant, but you get enough to be satisfied. 

The thing is,there is so much of the panang curry sauce leftover and it seems like a waste to throw it away! So, with some minimal grocery shopping I was able to stretch the $15 entree into another dinner for two! 

I defrosted some chicken breast and then sliced it very thin. I cut up half an onion and a few peppers and then remembered I had peas in the freezer as well. The only thing I had to buy was the coconut milk and another pepper.

As you can see from the takeout container above there is a decent amount of that delicious sauce left. 

I started by putting a little olive oil in the pan and then put in my chicken, sprinkled it with salt and pepper, and sautéed it until cooked through. I added the onions and cooked for another 3 minutes. The peppers went in last and I just let them heat through before pouring the sauce on top. 

Finally, I added the leftover panang sauce and added 1/2 cup of water and 3/4 cup of coconut milk. All these measurements were total guesses. I figured I wanted the pot to simmer for a bit so that the flavors could all merge together, but I didn't want the sauce to be too thick (hence the added water). The coconut milk was really just to stretch the sauce so there would be enough there for the amount of chicken and veggies I was adding. 

The last step was throwing in 1/2 cup of peas for a few minutes before serving. They only need enough time to thaw and heat and then you can serve up heaping bowls of the deliciously spicy curry. I would've made some extra rice to go with it, but I was feeling lazy...

Well we are headed off to the beach for a few days! I can't wait. Tonight I'll be prepping some beach food and getting us all packed up.
